Chicken

Corner Bakery Chicken has a unique taste and is to be sold by preparing this chicken strictly in accordance with the Corner Bakery recipe using the Corner Bakery ingredients and methods.  Chicken is sold in 3 main formats:  Chicken Pieces, quarters and Chicken Wings – and all have the same Mozambican flavour profile.

Temperature Control:  Chicken is a high-risk product and careless handling can cause one of our customers to get food poisoning.  Note that chicken is NEVER defrosted in the open air at room temperature.  Chicken is ALWAYS defrosted in a refrigerator overnight.  In this way the chicken completely defrosts and the chilled environment keeps bacteria controlled.

Bare Hands:  Bare hands can be used when preparing the chicken especially when rubbing the Corner Bakery Mozambican Sauce into the chicken pieces. Needless to say, hands need to be properly washed before working with the chicken.

Note that bare hands are only allowed in production when the product is baked or grilled at a temperature (above 72 degrees) after being touched by hands.  

The below process outlines how to prepare the chicken the Corner Bakery way.  No steps are to be skipped or applied differently other than as outlined below:

METHOD STEPS:

    1.   Take out 5kgs of chicken from the freezer & place into the chiller to defrost overnight.
    2.   Once the chicken is defrosted, pour 1.25 litres of the Corner Bakery Mozambican Sauce into a large mixing bowl.  (1kg chicken requires 250ml sauce.)
    3.   Add the chicken into the sauce bowl & use your hands to rub and apply the sauce evenly to all parts of the chicken.
    4.   Marinate the chicken for an hour.
    5.   Set the oven to 180 degrees Celsius.
    6.   Place the chicken onto a silicon sheet on a baking tray and spread the pieces evenly so that they do not touch each other.
    7.   Once the oven temperature is at 180 degrees Celsius, place the tray of chicken into the centre of the oven and set timer to 15 minutes.
    8.   After 15 minutes take the tray out of the oven and baste with the remaining sauce from the bowl.  Then place back into the oven for another 15 minutes.  (Total of 30 minutes)
    9.   When the chicken is very slightly charred & of a yellowish colour, the chicken is fully cooked.
    10.   Take the tray of chicken out of the oven & place the chicken into a white ceramic dish so it is ready to serve.
